"No menu because the corn decides. This is pre-Hispanic eating at its most honest. The kitchen's job is not to impose — it is to reveal."

"Expendio de Maiz's tlacoyos del dia are the oval masa cakes made fresh in front of you with whatever bean arrived that morning from the central Mexican supplier. There is no menu — you eat what was made. The masa is thick and the bean filling is bound inside, the tlacoyo is griddled until the exterior crisps. Topped with quelites, queso fresco, and salsa roja. This is the most honest food in Condesa."
