"The tuna salad is the point. Albacore has a lower oil content than bluefin, which means it doesn't overwhelm the bread. The cheese (Gruyere) adds salt and a melting quality that white American cannot. The dish is assembled and broiled until the cheese is bubbling and the bread is toasted. This is a great sandwich."
